As our herb connoisseur and caterer, Claudio draws from his experience in the restaurant business; he has worked in Italy and abroad namely Zurich (CH), Barcelona (E) and Arcachon (FR). From his experience and love of this landscape he proposes a “back to basics” approach to food and wine. Behind the cooking classes he designed is the philosophy to use local food products in season, to privilege traditional techniques suitable for home cooking, and to favor typical regional dishes. Claudio is also a certified wine taster and Slow Food member.
