As our herb connoisseur and caterer, Claudio draws from his experience in the restaurant business; he has worked in Italy and abroad namely Zurich (CH), Barcelona (E) and Arcachon (FR). From his experience and love of this landscape he proposes a “back to basics” approach to food and wine. Behind the cooking classes he designed is the philosophy to use local food products in season, to privilege traditional techniques suitable for home cooking, and to favor typical regional dishes. Claudio is also a certified wine taster and Slow Food member (ONAV).

As the classically trained musician of the family Nicola brings tone and composition to the team. Hailing from Ithaca, New York he is a lover of the outdoors and enjoys this immensely in his native Cinque Terre. He is a talented pasta maker and our cherished IT consultant. As a former barista he knows you never take an Italian coffee “to go.”

A graduate of McGill University, Montreal, Bianca lives between Italy and the US. As a member of Slow Food and an ONAV wine taster, Bianca's interests include food movements, food politics, and seeking out a good cappuccino. She is also the webmistress and vegan consultant for “A Casa.”
